Light Flavor:
1. Dissolve 22±2g of warm water and 2g of dry yeast, then add 100g of Liege waffle mix, 29g of egg, and 19g of invert syrup to form a dough.
2. Add 17g of butter and 2g of emulsifier, mix at medium speed for 6-8 minutes, then quickly mix for an additional 2 minutes to form a dough. Roll the dough into a ball and let it rest to ferment for 45-60 minutes.
3. Divide the dough into portions and place it in a preheated waffle maker at 160°C.
Bake for about 2 minutes 30 seconds to 3 minutes.
Rich Flavor:
1. Combine 400g of Liege waffle mix, 11g of full-fat milk powder, 2.5g of granulated sugar, 5g of dry yeast, 4g of salt, 50g of whole egg, 5g of vanilla syrup, 15g of invert syrup, and 100±2g of water.
Mix at low speed for 3 minutes, then at medium speed for 8-10 minutes until the dough surface is smooth and forms a membrane when stretched.
2. Mix at low speed for 2-3 minutes, then gradually add 80g of anhydrous butter in 2-3 portions, and mix at medium speed for 4-5 minutes until the dough is smooth and forms a membrane.
3. Gradually add 60g of pearl sugar to the dough at low speed, mixing just until slightly incorporated, then roll into a ball and let it ferment.
4. After 50 minutes of fermentation, divide the dough into 80g portions (this recipe makes 9 pieces), slightly shape into balls, then bake or freeze.
5. Place the dough in a preheated waffle maker at 160°C and bake for about 3 to 3.5 minutes.
