Description

This wheat flour is specially designed for bagels, with no additives, making it perfect for creating bagels with a crispy outer layer and a chewy interior. The texture of the finished product remains consistent when reheated, with a delightful bread aroma and sweetness when chewed. It can be made in various flavors or paired with fillings for different variations.


Recipe : 
1. Mix 15g of yeast with 621g of water until well combined.
2. Combine 1000g of bagel blended flour with 35g of sugar and 19g of salt, then mix with the yeast-water mixture until smooth.
3. Divide the dough into 120g portions, shape them into balls, and let them relax for 30 minutes. Then, shape each portion into a doughnut shape and allow the dough to active until it has doubled in size.
4. Place the bagels into boiling sugar water, cooking each side for 30 seconds before baking. Bake at 210°C for the top heat and 200°C for the bottom heat for 20 minutes. After baking, transfer the bagels from the baking tray to a cooling rack to keep the bottoms crispy.
