Easy to operate, no fermentation required, with a chewy, mochi-like texture. This is a snack that is crispy on the outside and soft and chewy on the inside. It has a larger volume than regular snow-white mochi bread, with individual pieces weighing up to 50g, and the final product can reach a height of 6cm. After baking, the shape remains smooth without cracking. The dough can also be made in advance and frozen, allowing for various flavor and shape variations.
Recipe :
1. Preheat the oven to 180°C for the top heat and 140°C for the bottom heat.
2. Mix 300g of snow-white mochi powder, 25g eggs, 25g butter, and 50g water at high speed for 4 minutes until the batter is well blended.
3. Transfer the batter into a piping bag and pipe 50g per piece.
4. Bake for 30 minutes, then open the vent and bake for an additional 15 minutes. Once done, remove from the oven.
