Description

Incorporating this into the recipe enhances production stability, resulting in a dense and soft cake with an elastic texture. It can be paired with improvers to increase the finished product's storage stability, preventing starch retrogradation.


Recipe:
  1. Combine 140g whole eggs, 23g water, and 96g sugar. Mix at medium speed for 2 minutes. Add 100g steamed cake flour (or low-gluten wheat flour), 35g steamed cake concentrate powder, 6.1g cake emulsifier, and 2g baking soda. Whip at high speed for 3-3.5 minutes until the batter reaches a specific gravity of 0.4~0.45.
  2. Gradually mix in 8.5g water and 28g salad oil at low speed. Pour the batter into molds, filling about 90% full (molds should ideally have holes at the bottom).
Equipment Usage:
  1. Steamer: Preheat the steamer until the water boils. Place the batter inside, reduce to low heat, and steam for 10-12 minutes.
  2. Electric Cooker: Preheat the cooker until boiling. Place the batter inside and steam for 8 minutes.
  3. Gas Steam Oven: Preheat the steam oven to 90°C, then reduce to low heat. Place the batter inside and steam for 12-15 minutes. When the temperature reaches 90°C, open the steam vent. If the temperature rises to 95°C, close the steam vent.

Storage : Store in a cool, dry place for up to one year.
