Description

Through the development of new materials, the complex task of separating eggs is reduced, making the process simpler with a lower failure rate and allowing for variations in different flavors. It can create a fine and delicate texture similar to chiffon cake with excellent flavor, or a thick, mousse-like texture similar to sponge cakes.


Recipe : 
1. Mix 500g of sponge cake concentrate powder, 50g of all-purpose flour, 450g of powdered sugar, 915g of eggs, and 83±2g of milk at medium speed for 2 minutes. Then, beat at high speed for 4 minutes until the weight ratio reaches 0.5. If needed, you can add 50g of cake moisture (enhancing) syrup and mix it in to increase the cake's moisture.
2. Add 100g of salad oil and 100g of melted butter (around 60°C), and mix at low speed for 2 minutes until well blended. Pour the mixture into a 6-inch removable-bottom cake mold.
3. Bake at 190°C for the top heat and 150°C for the bottom heat for 25-30 minutes, then remove from the oven.
