Description

利用新材料之研發,減少分蛋的繁複作業,操作上更為簡易且失敗率低,具有不同口味的變化性。可製成如戚風蛋糕細緻綿密的組織,風味佳,亦可呈現似乳沫類蛋糕之厚實口感。


製作方式:

1. 海綿蛋糕濃縮粉500克加入中筋麵粉

50克、糖粉450克、雞蛋915克、奶

83±2克以中速2分鐘拌勻,高速攪

  4分鐘至比重0.5。視需求可加蛋糕

保濕(強化)專用糖漿50克一起攪拌,

增加蛋糕濕潤度。

2. 加入沙拉油100克、融化奶油100

(60),慢速混合均勻2分鐘,倒

6吋可脫模式蛋糕模型中。         

3. 以上火190/下火150℃烤焙 25~30

鐘即可出爐。

儲 存:置於陰涼、乾燥處一年。

成品保存:完整包裝25度室溫下可放置4天不發霉;冷凍下可保存2個月,口感不變。
