Description

添加在海綿蛋糕中可製成細緻綿密不易老化的組織,風味佳,呈現似乳沫類蛋糕之厚實口感。


製作方法:

1. 中筋麵粉250克、糖粉450克、海綿

   蛋糕抗凍強化粉30克、全蛋550

   高速攪打4分鐘至比重0.35~0.37

2. 加入奶水50±2克、沙拉油60克及融

   化的奶油60克慢速混合均勻1分鐘

   ,倒入模型中。         

3. 上火190℃、下火155℃,烤焙30

   鐘即可出爐倒扣冷卻。

    存:置於陰涼、乾燥處一年。

成品保存:冷凍下可保存2個月,口感不變,可搭配保濕轉化糖漿使用。
