Description
操作簡易品質穩定可包餡使用,冰過後口感更佳。產品耐凍、有咬感,印模清楚,可做不同口味變化;也可包各種餡類,作為月餅用。


製作方法:

(A) 水晶粽:

      1. 將麥精糖漿100克加水110±2克

         煮至沸騰後,與水晶粉100克拌勻

         。
      2. 拌好之麵糊倒入模具,以蒸籠大

          火蒸20分鐘。
      3. 蒸完後趁熱塑形即可。

(B) 水晶月餅:

      1. 將麥精糖漿150克加水150~165克

         煮至沸騰後,與水晶粉100克拌勻

         。
      2. 拌好之麵糊倒入模具,以蒸籠

          大火蒸20分鐘。
      3. 冷卻後,即可包餡、壓模。


儲    存:置於陰涼、乾燥處一年。

成品保存:室溫1~2天、冷藏7~10天、冷凍1個月。
