蛋黃分蛋攪拌法。製作下一缸攪拌缸不需清洗只要刮乾淨即可連續操作。烤焙時間短。烤焙溫度固定,不需中途調整。打發性佳、操作簡單。口感鬆軟。麵糊不易消泡可同時做彩色蛋糕及彩色蛋糕捲。


製作方式:
1.
將彩色蛋糕濃縮粉70克、低筋麵粉9.5

克、糖20克、奶粉1.5克、雞蛋125

與水15克以快速打發6分鐘至比重達

0.37~0.39之間。

2.
加入水15克、液態植物油25克以慢速

混合均勻1分鐘,倒入7吋可脫模式圓

型模具中。

3.
上火190℃、下火150℃,烤焙25~28

分鐘即可出爐。

4.
冷卻後即可脫模。

存:置於陰涼、乾燥處一年。

成品保存:室溫4 天、冷凍14 天。
