Description

廣州傳統美食又稱白糖糕,質地Q 彈爽口,切面有明顯豎狀組織,晶瑩潔白,製作時搭配酵母發酵,帶有發酵微酸香氣的傳統點心。




製作方法:
1. 粉100 克與冷水47 克先拌勻,再慢慢沖入
    熱水43 克,同時攪拌均勻。
2. 酵母1.3 克用溫水4.3 克拌勻後,待步驟2
    米漿降溫到35℃時,倒入攪拌均勻,進行
    發酵。
3. 將米漿置於28℃,發酵1 小時(最後10 分
    鐘時,蒸籠預熱備用)。
4. 蒸25-30 分鐘即可。

儲       存:置於陰涼、乾燥處16個月。
成品保存:室溫1-2天、冷藏7-10天。
