Description

This wheat flour is specially designed for Danish croissants, creating a light and soft croissant dough. The dough has excellent extensibility, and after folding in the butter, it has distinct layers with a rich aroma. After baking, it becomes flaky and evenly colored, offering a more distinctive result compared to using regular flour.


Recipe : 
1. Roll 190g of butter into a flat sheet and set it aside at room temperature.
2. Mix 500g of Danish and croissant blended flour, 32g of sugar, 5g of salt, 225g of water, 30g of whole egg, and 7.5g of yeast. Mix on low speed for 4 minutes, then on medium speed for 8 minutes until the dough becomes smooth and shiny. Roll it flat and let it rest for 30 minutes.
3. Take the dough and wrap it in butter, fold it in thirds twice to shape it, then freeze it for 30 minutes.
4. Remove from the freezer and roll the dough to a thickness of 0.5-1cm using a dough sheeter. Cut into triangles and shape into croissants.
5. After the final actives, bake at 200°C for the top heat and 190°C for the bottom heat for 18-20 minutes.
